Rhubarb Muffins
1 1/4 cup brown sugar (packed)
1/2 cup vegetable oil
1 egg
1 tablespoon vanilla
1 cup buttermilk
1 1/2 cups rhubarb (diced)
2 1/2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
combine sugar, oil, egg, vanilla & buttermilk & beat well. Stir in rhubarb. In separate bowl, combine dry ingredients, then stir into rhubarb mixture just until blended. Spoon batter into 20 greased med. muffin cups, filling 2/3 full. Sprinkle topping on (recipe below) & bake 400 degrees, 20-25 minutes.
TOPPING: 1/3 cup granulated sugar (or brown), 2 teaspoons cinnamon & 1 tablespoon melted butter.
